Look, I'm not going to lie. There's a guy in here, "Lockout", that makes this one of the least productive and most boring places to talk training on the internet, and no one can be bothered to ban him. Buyer beware. Arguments about minutiae. Ad hominems. Appeals to authority. Training #1.

Pork Shoulder:

Marinated over night, slow cooked, rested for an hour, rubbed with brown sugar, salt and spices. Baked for like 10 minutes at 350 so the sugar carmalizes and sizzles. Served with my own BBQ sauce on Texas toast.

BBQ Sauce:

1 small can of Tomato Paste
2/3 (use tomato paste can to measure) can Srircha Sauce
1/3 can Oyster Sauce
1/3 can Lime Juice
1/3 to ½ Cup of Brown Sugar
1 TBSP of Liquid Smoke
1 Bottle Beer

Collared Greens with Pork Hocks and Hot Sauce

Garlic Mashed Potatoes

Sweet Corn Bread

Sautéed Asparagus (Chili Oil and Soy Sauce)

Andy and my little brother came over to help me and Margaret eat the feast. Zak brought a bottle of wine so I broke out a bottle of Primativo (which I can highly recommend), and forked over the good Scotch (MacAllen Cask Strength) after dinner.

Sorry...double posting...but this is just damn good.
So I feed the heck out of Andy and he says, “You owe me.” For him helping me eat the food. Prick. Miserable prick. Best out of 365.
