2/3 c. pumpkin
3 eggs
1 c. sugar or Splenda
1/2 t. cinnamon
3/4 c. flour
1 t. baking soda
1 t. salt
Mix together and pour into standard sized cookie sheet lined with greased wax paper. Bake 15 minutes @ 350. Turn out onto a towel sprinkled with powdered sugar and peel off wax paper. Roll up towel and chill for 1 hour. Unroll, spread filling evenly, and reroll. Keep chilled.
Filling:
8 oz. cream cheese
1 c. powdered sugar
1 t. vanilla
2 T. margarine
